Haupia is the Hawaiian word for a coconut pudding, and chocolate haupia pie has become a favorite.

I’ve made these with the small pre-made graham cracker crusts. Feel free to use your favorite pie crust.

1 Can Coconut Milk

1 C Milk

1 C Sugar

1/2 C corn starch

1 C cold water

1 bag semi-sweet chocolate chips

Mix corn starch and water (I like to shake them in a jar–no lumps that way.)

Heat milk, coconut milk, and sugar to boiling, and then simmer. Add corn starch and water, and stir until thick.

Melt chocolate chips in the microwave. Mix half of coconut cream in with chocolate, and pour into the bottom of the pie crust. Pour remaining coconut cream onto the pie. Refrigerate until set.

May be topped with whipped cream.
